8 oz (225g) whole wheat pasta (penne or rigatoni)

2 cups mixed vegetables (bell peppers, zucchini, spinach, carrots - chopped)

1 cup marinara sauce

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil leaves (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Boil a large pot of salted water. Add the whole wheat pasta and cook until al dente according to package instructions, about 8-10 minutes. Drain and set aside.

      Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped mixed vegetables and sauté for about 5-7 minutes until they are tender and vibrant. Season with garlic powder, Italian seasoning, salt, and pepper.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed veggies, marinara sauce, ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Stir until everything is well mixed.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it out evenly.

            Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese on top of the pasta mixture, creating an even layer of cheesy goodness.

              Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Once baked, remove it from the oven and let it cool for a few minutes. Top with fresh basil leaves for garnish before serving.
