Quick Shrimp Tacos with Creamy Avocado Sauce

For the Shrimp:

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon paprika

Salt and pepper to taste

Juice of 1 lime

For the Creamy Avocado Sauce:

1 ripe avocado

½ cup plain Greek yogurt

1 tablespoon lime juice

1 small garlic clove, minced

Salt to taste

Fresh cilantro (optional, for garnish)

For Assembling the Tacos:

8 small corn or flour tortillas

1 cup shredded red cabbage

1 medium tomato, diced

1 small red onion, thinly sliced

Lime wedges for serving

Instructions
 

Prepare the Avocado Sauce: In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, minced garlic, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste and set aside.

    Cook the Shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Heat a large skillet over medium-high heat. Once hot, add the shrimp and cook for about 2-3 minutes on each side, or until they are pink and opaque. Squeeze lime juice over the shrimp before removing from heat.

      Warm the Tortillas: While the shrimp is cooking, warm the tortillas. You can do this by placing them directly on the skillet for about 30 seconds on each side or wrapping them in a damp paper towel and microwaving for about 30 seconds.

        Assemble the Tacos: Take a warm tortilla and layer with a few pieces of shrimp. Top with shredded red cabbage, diced tomatoes, and sliced red onion. Drizzle with the creamy avocado sauce and garnish with fresh cilantro, if desired.
