Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

Juice of 1 lime

For the Cabbage Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, grated

1/4 cup fresh cilantro, chopped

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper, to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Sliced avocado (optional)

Hot sauce (optional)

Instructions

Prepare the Slaw: In a large bowl, combine the green cabbage, red cabbage, grated carrot, and chopped cilantro. In a separate small bowl, mix together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined. Set aside to let the flavors meld.

Marinate the Shrimp: In a mixing bowl, combine the shrimp with olive oil, chili powder, cumin, garlic powder, paprika, lime juice, salt, and pepper. Toss well to coat and let marinate for about 10 minutes.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove from heat.

Warm the Tortillas: In the same skillet or a separate pan, warm the tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos: On each tortilla, place a generous portion of the cabbage slaw followed by a few pieces of shrimp. If desired, add slices of avocado and a drizzle of hot sauce.

Garnish and Serve: Squeeze extra lime juice on top and serve immediately with lime wedges on the side.
