Quick Shrimp Tacos with Avocado Lime Sauce

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup red cabbage, shredded

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

For the Avocado Lime Sauce:

1 ripe avocado

1/2 cup Greek yogurt or sour cream

Juice of 1 lime

1 clove garlic, minced

Salt and pepper to taste

Prep the Shrimp: In a medium bowl, mix the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated. Let it marinate for about 10 minutes.

    Make the Avocado Lime Sauce: In a blender or food processor, add the avocado, Greek yogurt (or sour cream), lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy. If it’s too thick, you can add a little water to reach your desired consistency.

      Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.

        Warm the Tortillas: In a separate skillet, warm the tortillas for about 30 seconds on each side or until they are pliable. You can also wrap them in a damp paper towel and microwave for 30 seconds.

          Assemble the Tacos: Place a generous portion of shredded red cabbage on each tortilla. Top with the cooked shrimp and drizzle with the avocado lime sauce. Sprinkle fresh cilantro on top.

            Serve: Squeeze fresh lime juice over the assembled tacos and serve immediately with additional lime wedges on the side.
