Quick Roasted Garlic Chicken Spaghetti

12 oz spaghetti

2 tablespoons olive oil

4-6 cloves garlic, minced (adjust to taste)

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup cherry tomatoes, halved

2 cups baby spinach

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Garlic: In a small oven-safe dish, combine 2 tablespoons of olive oil and the minced garlic. Roast in the preheated oven for about 10-12 minutes, or until the garlic is fragrant and lightly golden. Remove and set aside.

      Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions. Reserve 1 cup of pasta water, then drain the pasta and return to the pot.

        Sauté the Chicken: While the pasta cooks, heat a large skillet over medium-high heat. Add the chicken pieces, Italian seasoning, salt, and pepper. Sauté until the chicken is cooked through and lightly browned, about 6-8 minutes.

          Combine Ingredients: Once the chicken is done, add the roasted garlic along with the olive oil from the dish to the skillet. Stir in the cherry tomatoes and cook for another 2-3 minutes until the tomatoes start to soften.

            Add Spinach: Stir in the baby spinach and cook just until wilted, about 1-2 minutes.

              Mix Pasta & Sauce: Add the cooked spaghetti to the skillet. Pour in a bit of the reserved pasta water to create a sauce that clings to the spaghetti. Toss everything together until well combined.

                Finish with Cheese: Remove from heat and mix in the grated Parmesan cheese. Taste and adjust seasoning if necessary.

                  Serve: Plate the spaghetti and garnish with fresh basil leaves and additional Parmesan if desired. Serve with lemon wedges on the side for a fresh kick.
