8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

1/4 cup fresh lemon juice (about 2 lemons)

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup fresh parsley, chopped

1/2 cup grated Parmesan cheese

Lemon wedges for garnish

Cook the Pasta: In a large pot of boiling salted water, cook spaghetti or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Shrimp: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn.

      Add the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with red pepper flakes, salt, and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.

        Combine Ingredients: Lower the heat to medium, and add the lemon zest, lemon juice, and reserved pasta water (start with 1/2 cup). Stir to combine nicely.

          Mix with Pasta: Add the drained pasta to the skillet with the shrimp and lemon sauce. Toss everything together until the pasta is well coated and heated through. If needed, add more pasta water to loosen the sauce.

            Finish Off: Stir in the chopped parsley and half of the grated Parmesan cheese. Taste and adjust seasoning with salt and pepper.

              Serve: Plate the pasta and shrimp, then sprinkle with the remaining Parmesan cheese and garnish with lemon wedges. Serve immediately and enjoy!
