1 cup quinoa, rinsed

2 cups vegetable broth or water

1 lb shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup spinach leaves

2 green onions, chopped

Fresh parsley, chopped, for garnish

Cook the Quinoa: In a medium pot, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
