Quick Garlic Shrimp Fried Rice

1 pound large shrimp, peeled and deveined

4 cups cooked jasmine rice (preferably day-old)

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 cup frozen peas and carrots mix

2 large eggs, lightly beaten

3 green onions, sliced (whites and greens separated)

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Prep the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. Season lightly with salt and pepper.

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.

      Sauté Garlic: In the same pan, add another tablespoon of sesame oil. Add the minced garlic and the whites of the green onions. Sauté for about 30 seconds until fragrant but not burnt.

        Add Vegetables: Toss in the frozen peas and carrots and stir-fry for 2-3 minutes, allowing them to thaw and heat through.

          Incorporate Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir it in with the vegetables and cook for about 2 minutes to allow everything to heat through.

            Add Sauces: Pour the soy sauce and oyster sauce over the rice, mixing well to ensure an even distribution of flavor.

              Scramble Eggs: Push the rice to one side of the pan and pour the beaten eggs into the empty space. Scramble them until fully cooked, then mix them back into the rice.

                Combine Shrimp and Finish: Add the cooked shrimp back to the pan. Stir everything together, ensuring the shrimp are heated through. Adjust seasoning with additional salt and pepper if needed.

                  Garnish & Serve: Remove from heat and stir in the green onion greens. Serve warm, garnished with fresh cilantro and lime wedges on the side for extra zest.
