3 cups cooked jasmine rice (preferably day-old)

4 cloves garlic, minced

1 medium onion, finely chopped

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

2 tablespoons vegetable oil (or sesame oil for extra flavor)

2 large eggs, beaten

1 cup mixed vegetables (like peas, carrots, and corn)

3 green onions, chopped

Salt and black pepper to taste

Optional garnish: fresh cilantro or fried shallots

Preparation: If using freshly cooked rice, spread it on a baking sheet to cool and dry out slightly. This will help prevent it from becoming mushy in the frying process.

    Heat the Oil: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic and chopped onion to the skillet. Sauté for about 2-3 minutes until fragrant and the onions are translucent.
