Quick Beef Tacos with Fresh Salsa

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream

For the Fresh Salsa:

2 medium tomatoes, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Prepare the Salsa: In a medium bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro. Squeeze in the lime juice and season with salt. Mix well, cover, and set aside to let the flavors meld.

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes or until translucent. Stir in the minced garlic and cook for an additional 30 seconds.

      Add the Ground Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook for about 5-7 minutes, breaking it up with a spatula until browned and fully cooked.
