1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

2 green onions, chopped

2 tablespoons vegetable oil

Cooked rice or quinoa, for serving

Optional: sesame seeds for garnish

Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, oyster sauce, sesame oil, minced garlic, and grated ginger. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prep the Vegetables: Wash and slice the bell pepper, broccoli, carrot, and snap peas. Ensure all vegetables are ready before you start cooking, as the stir-fry will go quickly.

      Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the pan in a single layer. Cook for about 2-3 minutes without stirring, until it's browned on one side. Stir and cook for another 1-2 minutes until fully cooked. Remove the beef from the pan and set aside.

          Stir-Fry the Vegetables: In the same pan, add the broccoli, bell pepper, carrot, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are vibrant and just tender but still crisp.

            Combine and Finish: Return the beef to the pan and toss everything together. Add the chopped green onions and stir for another minute to combine flavors. Adjust seasoning with extra soy sauce if desired.
