2 cups cooked chicken, shredded or diced

1 cup BBQ sauce (your favorite brand or homemade)

1 ½ cups shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil (for frying)

½ cup red onion, thinly sliced (optional)

½ cup fresh cilantro, chopped (optional for garnish)

Sour cream and guacamole (for serving)

Instructions
 

Prepare the Chicken Filling: In a large bowl, combine the shredded chicken with BBQ sauce until well coated. You can adjust the amount of BBQ sauce based on your taste preference.

    Assemble the Quesadillas: Place one tortilla on a flat surface. Sprinkle a layer of cheddar cheese over one half of the tortilla. Add a generous portion of the BBQ chicken mixture on top of the cheese, followed by a layer of mozzarella cheese. Optionally, add a few slices of red onion for extra flavor. Fold the tortilla over to form a half-moon shape.

      Cook the Quesadilla: In a large skillet over medium heat, add olive oil. Once the oil is hot, carefully place the folded quesadilla in the skillet.
