3 cups cooked jasmine rice (preferably day-old for best texture)

6 strips of bacon, chopped

1 medium onion, finely diced

2 cloves garlic, minced

1 cup frozen peas and carrots mix

4 green onions, sliced (white and green parts separated)

3 tablespoons soy sauce

1 tablespoon sesame oil

2 large eggs, lightly beaten

Salt and freshly ground black pepper, to taste

Optional: Sriracha or chili sauce for serving

Instructions
 

Cook the Bacon: In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.

    Sauté Aromatics: Add the diced onion to the skillet and sauté in the bacon fat until translucent, about 2-3 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

      Add Veggies: Toss in the frozen peas and carrots. Stir-fry for 2-3 minutes until heated through and the veggies are slightly tender.

        Prepare the Rice: Push the vegetable mixture to one side of the skillet. On the other side, add the cooked jasmine rice. Use a spatula to break up any clumps and allow the rice to heat through, about 2-3 minutes.

          Combine and Season: Mix the rice with the sautéed veggies. Add the crispy bacon, soy sauce, and sesame oil. Stir well to combine everything evenly. Taste and adjust seasoning with salt and pepper as needed.

            Scramble the Eggs: Create a well in the center of the rice mixture and pour in the beaten eggs. Let them cook for about 1 minute, then scramble with the rice until fully cooked and incorporated.

              Finish with Green Onions: Stir in the sliced white parts of the green onions and cook for another minute. Remove from heat and garnish with the green parts.
