Quick and Easy Veggie-Packed Quesadillas

4 whole wheat tortillas

1 cup shredded cheese (cheddar or mozzarella)

1 cup baby spinach, chopped

1 small bell pepper, diced (any color)

1 small zucchini, grated

½ cup corn (canned or frozen)

½ cup black beans, rinsed and drained

1 teaspoon olive oil

1 teaspoon cumin

½ teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Salsa or guacamole for serving

Instructions
 

Prep the Veggies: In a large mixing bowl, combine the chopped spinach, diced bell pepper, grated zucchini, corn, and black beans. Add cumin, garlic powder, salt, and pepper. Mix well to evenly coat the veggies with the spices.

    Heat the Pan: In a non-stick skillet, heat 1 teaspoon of olive oil over medium heat.

      Assemble the Quesadillas: Place one tortilla in the skillet. Sprinkle half of the shredded cheese on one half of the tortilla. Spread a generous portion of the veggie mixture over the cheese, then top with the remaining half of the cheese. Fold the tortilla over to create a half-moon shape.

        Cook the Quesadilla: Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted. Repeat with the remaining tortillas and filling.
