1 cup rolled oats

1 cup milk of choice (almond, oat, cow's milk, etc.)

1/2 cup pure pumpkin puree

1/4 cup Greek yogurt (optional for creaminess)

2 tablespoons maple syrup (adjust to taste)

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon vanilla extract

Pinch of salt

Toppings: Chopped pecans, walnuts, pumpkin seeds, dried cranberries, or additional maple syrup

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats, milk, pumpkin puree, Greek yogurt (if using), maple syrup, pumpkin pie spice, cinnamon, vanilla extract, and salt. Stir well until all ingredients are fully incorporated and the oats are evenly coated.

    Divide the mixture equally between two jars or containers with lids. Make sure that the oats are submerged in the liquid so they soak up all the flavors overnight.

      Seal the jars tightly and refrigerate them for at least 4 hours, preferably overnight, to allow the oats to soften and the flavors to meld.

        In the morning, remove the jars from the refrigerator and give the oats a good stir. Add a splash of milk if you prefer a creamier consistency.
