1 tsp baking soda

½ tsp baking powder

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground ginger

1 cup canned pumpkin puree

½ cup granulated sugar

½ cup brown sugar, packed

⅓ cup vegetable oil

2 large eggs

1 tsp vanilla extract

8 oz cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract (for cream cheese filling)

Optional: Chopped walnuts or pecans for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it generously.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.

      Combine Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.

        Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture until just blended. Be careful not to overmix; it's okay if the batter is slightly lumpy.

          Prepare the Cream Cheese Filling: In a separate bowl, beat the softened cream cheese, powdered sugar, and 1 tsp of vanilla extract together until smooth and creamy.

            Fill Muffin Cups: Spoon about 2 tablespoons of muffin batter into each muffin cup. Then, add about 1 tablespoon of the cream cheese mixture in the center of each muffin. Finally, top with an additional tablespoon of muffin batter, covering the cream cheese filling.

                Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean (a little cream cheese may cling; that’s fine).
