1 cup canned pumpkin puree

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until the mixture is smooth and well combined.

      Sift Dry Ingredients: In another bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. This step helps to aerate and combine the dry ingredients.

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients. Gently fold the two together using a spatula or spoon until just combined. Do not overmix; a few lumps are okay.
