3 lbs beef chuck roast

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

1 cup beef broth

1 cup barbecue sauce (your choice)

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

1 tablespoon brown sugar

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

6 soft sandwich rolls

Coleslaw, for topping (optional)

Pickles, for serving (optional)

Instructions
 

Prepare the Beef: Season the beef chuck roast generously with salt and pepper on all sides.

    Sear the Meat: In a large, heavy Dutch oven, heat the olive oil over medium-high heat. Once hot, add the chuck roast and sear for 4-5 minutes on each side until a nice brown crust forms. Remove the roast and set it aside.

      Sauté Aromatics: In the same pot, add the diced onion and cook over medium heat until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Deglaze the Pot: Add the beef broth, scraping the bottom of the pot to remove any browned bits. This adds great flavor to the dish.

          Add Flavorings: Stir in the barbecue sauce, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, and cayenne pepper. Mix well to combine.

            Slow Cook: Return the seared chuck roast to the pot. Bring the mixture to a gentle simmer. Cover the pot and reduce the heat to low. Allow it to cook for 3-4 hours, or until the beef is tender and easily pulls apart with a fork.

              Shred the Beef: Once the beef is cooked, remove it from the pot and let it rest for a few minutes. Using two forks, shred the beef into bite-sized pieces.

                Combine and Flavor: Return the shredded beef to the pot with the sauce, mixing it well to ensure it’s fully coated.
