2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup buttermilk, room temperature

½ cup unsalted butter, melted

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1 cup crushed pineapple (drained)

1 cup shredded coconut

½ cup chopped walnuts or pecans (optional)

1 cup powdered sugar (for frosting)

2 tablespoons milk (for frosting)

1 teaspoon vanilla extract (for frosting)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

      Combine Wet Ingredients: In another bowl, whisk together the melted butter, granulated sugar, and eggs until well combined. Add in the buttermilk, vanilla extract, and drained pineapple, mixing until blended.

        Combine Mixtures: Gradually add the dry ingredient mixture into the wet mixture. Stir until just combined—do not overmix. Gently fold in the shredded coconut and chopped nuts if using.

          Bake the Cake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
