1 lb (450 g) smoked sausage, sliced (kielbasa or your favorite type)

4 medium-sized potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken broth

2 cups whole milk or heavy cream

1 cup corn kernels (fresh, frozen, or canned)

1 tsp dried thyme

1 tsp paprika

Salt and pepper, to taste

3 tbsp olive oil or butter

1 cup shredded cheddar cheese (optional)

Fresh parsley or chives, for garnish

Instructions
 

Sauté the Sausage:

    In a large pot, heat the olive oil or butter over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage from pot and set aside.

      Add Vegetables:

        In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

          Cook the Potatoes:

            Add the diced potatoes to the pot, followed by the chicken broth. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes or until the potatoes are tender.

              Incorporate Cream and Corn:

                Once the potatoes are cooked, stir in the milk (or heavy cream) and corn. Add the thyme, paprika, salt, and pepper to taste. If you like it creamy, let the chowder simmer for an additional 5-10 minutes to thicken slightly.

                  Combine and Heat:

                    Return the cooked sausage to the pot. Stir everything together and let the chowder simmer for a few minutes to heat the sausage through and enhance the flavors.

                      Optional Cheesy Delight:

                        If using cheddar cheese, stir it into the chowder just before serving until melted and creamy.
