2 cups cooked jasmine rice (preferably day-old)

1 ripe pineapple, cored and diced

1 cup mixed vegetables (carrots, peas, corn)

1 small red bell pepper, diced

2 eggs, lightly beaten

3 green onions, sliced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

Salt and pepper to taste

Fresh cilantro or basil for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Rice: If you haven't already, cook the jasmine rice according to package instructions. It's best if the rice is day-old, as it fries better.

    Sauté Vegetables: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Add Pineapple and Peppers: Toss in the diced pineapple and red bell pepper. Sauté for about 3-4 minutes until they caramelize slightly and the pineapple is warmed through.

        Add Mixed Vegetables: Stir in the mixed vegetables (carrots, peas, and corn) and cook for an additional 2-3 minutes until everything is heated and combined.

          Scramble the Eggs: Push the vegetables to one side of the skillet and pour the beaten eggs into the pan. Allow them to scramble for a few moments, then mix them in with the vegetables.

            Stir in Rice: Add the cooked jasmine rice to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything together, ensuring the rice is evenly coated with the sauces.
