Pineapple Chicken Skewers

2 boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 medium red onion, cut into 1-inch pieces

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground ginger

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional, for spice)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, honey, olive oil, minced garlic, ground ginger, black pepper, and crushed red pepper flakes. Whisk until well blended. Add the chicken cubes to the marinade, making sure they're well coated. Cover the bowl and refrigerate for at least 30 minutes, preferably 2-3 hours for more flavor.

    Prepare the Skewers: If using bamboo skewers, soak them in water for 30 minutes to prevent burning. This ensures that your skewers won’t catch fire during grilling.

      Assemble the Skewers: After marinating, take the chicken from the fridge and begin threading the skewers. Alternate between chicken, pineapple, red and yellow bell peppers, and onion pieces. Aim for about 3-4 pieces of chicken and an equal number of pineapple and veggies on each skewer.

        Preheat the Grill: Heat your grill or grill pan over medium-high heat. Lightly grease the surface with olive oil or cooking spray to prevent sticking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).

            Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh cilantro or parsley if desired. Serve with a side of rice, quinoa, or a fresh garden salad for a complete meal.
