1 lb (450g) boneless, skinless chicken breast, diced

1 cup fresh pineapple, finely diced

1 tablespoon olive oil

2 cloves garlic, minced

1 small red bell pepper, diced

1 small onion, finely chopped

2 green onions, chopped

2 tablespoons soy sauce (low sodium)

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 teaspoon fresh ginger, minced

Salt and pepper to taste

1 head of butter or iceberg lettuce, leaves separated

Optional toppings: chopped cilantro, crushed peanuts, lime wedges for serving

Instructions
 

Prep the Chicken: In a medium bowl, season the diced chicken breast with salt and pepper. Set aside.

    Cook the Chicken: In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

      Add Chicken: Add the seasoned chicken to the skillet and cook, stirring frequently, until the chicken is browned and cooked through, about 5-7 minutes.

        Mix in Veggies: Once the chicken is cooked, add the onion, red bell pepper, and diced pineapple. Stir together and cook for another 3-4 minutes, until the vegetables are slightly tender.

          Add Sauces: Pour in the soy sauce, hoisin sauce, and sesame oil. Mix thoroughly, allowing the flavors to meld for an additional 2 minutes. Adjust seasoning with salt and pepper if needed.
