Pineapple Chicken Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 cup shredded rotisserie chicken

1 cup fresh pineapple, diced

1/2 cup bell peppers, finely diced (red and yellow)

1/2 cup green peas (fresh or frozen)

3 green onions, sliced (white and green parts separated)

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 eggs, lightly beaten

Salt and pepper to taste

Fresh cilantro or basil for garnish (optional)

Lime wedges for serving

Instructions
 

Prep the Rice: If you haven't already, cook 1 cup of jasmine rice as per the package instructions and allow it to cool completely. Ideally, use rice that was made a day ahead and stored in the fridge.

    Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic and the white parts of the green onions to the pan. Sauté for about 30 seconds, or until the garlic becomes fragrant.

        Add Vegetables: Toss in the chopped bell peppers and green peas. Stir-fry the mixture for 2-3 minutes, allowing the veggies to soften slightly while still maintaining their crunch.

          Introduce Chicken and Pineapple: Add the shredded rotisserie chicken and diced pineapple into the pan. Mix well to combine all ingredients and cook for another 2 minutes, allowing the chicken to heat through and the pineapple juices to mingle with the other flavors.

            Push to the Side: Push the mixture to one side of the pan. Pour the beaten eggs onto the opposite side and scramble them gently. Once cooked, mix the scrambled eggs with the chicken mixture.

              Combine Rice: Add the cold jasmine rice to the pan. Use a spatula to break up any clumps and mix thoroughly. Stir in the soy sauce and oyster sauce, ensuring all the rice is evenly coated. Cook for another 3-4 minutes, allowing the rice to heat through and absorb the flavors.

                Season to Taste: Taste the rice and add salt and pepper if needed. For a bit of extra flavor, you can add more soy sauce if desired.

                  Garnish and Serve: Remove the pan from heat and sprinkle the green parts of the green onions on top. Serve the fried rice hot, garnished with fresh cilantro or basil if desired. Offer lime wedges on the side for an extra zesty kick.
