Ingredients

1 can (20 oz) crushed pineapple, drained

1 cup sugar

1 cup crushed buttery crackers (like Ritz or Town House)

1/2 cup unsalted butter, melted

1/2 cup grated sharp cheddar cheese

1/2 cup chopped pecans or walnuts (optional)

2 large eggs

1 tsp vanilla extract

A pinch of salt

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Mix the Base: In a large mixing bowl, combine the drained crushed pineapple, sugar, and a pinch of salt. Stir well to mix the ingredients and let sit for about 5 minutes to enhance the flavor.

Add Crackers and Nuts: Gently fold in the crushed buttery crackers and chopped nuts (if using) to the pineapple mixture, ensuring everything is well combined.

Prepare the Egg Mixture: In a separate bowl, whisk together the eggs, melted butter, and vanilla extract until thoroughly mixed.

Combine: Gradually add the egg mixture into the pineapple mixture, stirring continuously until everything is well coated and evenly mixed.

Add Cheese: Stir in the grated cheddar cheese, distributing it evenly throughout the mixture.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, smoothing the top with a spatula.

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until it is bubbly and a light golden brown on top.

Cool and Serve: Remove from oven and let it cool for about 10 minutes before serving. This allows the casserole to set a little more.

Enjoy: Serve it warm as a delightful side dish or a sweet dessert!
