2 boneless, skinless chicken breasts

1/2 cup basil pesto (store-bought or homemade)

4 slices of fresh mozzarella cheese

2 large tomatoes, sliced

1 cup fresh basil leaves

1 tablespoon olive oil

4 slices of sourdough or ciabatta bread

Salt and pepper to taste

Balsamic glaze (for drizzling)

Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat the olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.

    Slice the Chicken: Once rested, slice the chicken breast into thin strips.

      Assemble the Sandwich: On two slices of bread, spread a generous layer of basil pesto. Layer on the sliced chicken, followed by fresh mozzarella slices, tomato slices, and basil leaves. Top with the remaining slices of bread.

        Grill the Sandwich: Heat a grill pan over medium heat. Add a little olive oil if desired. Place the sandwiches on the grill pan and cook for about 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.
