Peruvian Grilled Chicken with Creamy Green Sauce

For the Chicken Marinade:

4 chicken thighs or breasts, skinless and bone-in

4 cloves garlic, minced

Juice of 2 limes

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper to taste

For the Creamy Green Sauce (Aji Verde):

1 cup fresh cilantro leaves

1 jalapeño, seeds removed (for less heat, adjust to taste)

2 cloves garlic

1/2 cup mayonnaise

1/2 cup sour cream or Greek yogurt

Juice of 1 lime

Salt to taste

Marinate the Chicken:

    In a large bowl, combine minced garlic, lime juice, olive oil, soy sauce, paprika, ground cumin, oregano, salt, and pepper. Add the chicken thighs or breasts, making sure they are well-coated. Cover and marinate for at least 1 hour (up to overnight for more flavor).

      Prepare the Creamy Green Sauce:

        In a blender or food processor, combine cilantro leaves, jalapeño, minced garlic, mayonnaise, sour cream (or Greek yogurt), lime juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste. Refrigerate until ready to serve.

          Preheat the Grill:

            Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and covered with white ash. For a gas grill, set to medium-high.

              Grill the Chicken:

                Remove chicken from marinade, allowing excess marinade to drip off. Place chicken on the grill and cook for about 6-8 minutes per side, or until fully cooked through (internal temperature should reach 165°F/75°C). Let the chicken rest for 5 minutes.

                  Serve:

                    Slice the grilled chicken and serve with ample drizzle of the creamy green sauce on top or on the side for dipping. Garnish with additional cilantro and lime wedges if desired.
