Ingredients

4 medium-sized Yukon Gold potatoes, peeled and diced

1 large yellow onion, chopped

3 cloves garlic, minced

4 cups vegetable broth (or chicken broth)

1 cup heavy cream (or coconut cream for a vegan option)

1 cup milk (or plant-based milk)

2 tablespoons unsalted butter (or olive oil for vegan)

1 teaspoon dried thyme

1 teaspoon salt (to taste)

½ teaspoon black pepper

Fresh chives, chopped (for garnish)

Shredded cheddar cheese (optional, for garnish)

Instructions

Sauté Aromatics: In a large pot, melt the butter (or heat the olive oil) over medium heat. Add the chopped onion and sauté for about 5 minutes until it's translucent. Stir in the minced garlic and cook for an additional 1 minute, making sure it doesn’t burn.

Cook Potatoes: Add the diced potatoes to the pot. Stir well to coat with the onion and garlic mixture. Pour in the vegetable (or chicken) broth. Season with thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it simmer for about 15-20 minutes, or until the potatoes are fork-tender.

Blend the Soup: Once the potatoes are tender, remove the pot from the heat. Using an immersion blender, puree the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender, making sure to let it cool slightly before blending.

Add Creaminess: After blending, return the soup to low heat. Stir in the heavy cream and the milk. Let it warm gently without boiling, adjusting seasoning if necessary. If the soup is too thick, add more milk or broth until the desired consistency is reached.

Serve Warm: Ladle the creamy potato soup into bowls. Garnish with chopped chives and shredded cheddar cheese if desired. Serve hot with crusty bread on the side for the ultimate comfort meal!
