Ingredients

1 cup all-purpose flour

1 cup brown sugar, packed

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp ground cinnamon

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 tsp vanilla extract

1 cup chopped pecans

1/3 cup light corn syrup

1/4 cup heavy cream

Optional: Dusting of powdered sugar for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray it with non-stick cooking spray.

Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Mix Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, corn syrup, and heavy cream until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix—the batter should be lumpy.

Add Pecans: Fold in the chopped pecans, ensuring they are evenly distributed throughout the batter.

Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden brown.

Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Optionally, dust with powdered sugar before serving. Enjoy your delightful pecan pie muffins warm or at room temperature.
