Ingredients

1 cup pecans, finely chopped

1 cup dates, pitted and chopped

1/2 cup almond flour

1/4 cup maple syrup

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp salt

1/3 cup coconut flakes (for coating)

Optional: 1/4 cup dark chocolate chips (for extra indulgence)

Instructions

Prep the Pecans: Place the finely chopped pecans in a mixing bowl and set aside.

Blend Dates: In a food processor, add the chopped dates and pulse until they form a sticky paste. If your dates are dry, you can soak them in warm water for 10 minutes to soften before blending.

Combine Ingredients: In the same bowl with the pecans, add the date paste, almond flour, maple syrup, vanilla extract, cinnamon, and salt. If you're using dark chocolate chips, fold them in at this stage.

Mix Thoroughly: Use your hands to mix all the ingredients together until completely incorporated. The mixture should be slightly sticky but manageable.

Form Balls: Scoop out tablespoon-sized portions of the mixture and roll them between your palms to form small balls. Place them on a parchment-lined tray.

Coat the Balls: In a shallow dish, place the coconut flakes. Roll each ball in the coconut until fully coated, adding a delicious texture and flavor.

Chill: Once all the balls are formed and coated, refrigerate them for at least 30 minutes to firm up.

Serve & Enjoy: After chilling, your Pecan Pie Balls are ready to be served! Enjoy these delightful no-bake treats as a snack or dessert.
