1 tablespoon sesame oil

2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)

3 cloves garlic, minced

1 inch fresh ginger, minced

1 cup fresh spinach

1/4 cup peanut butter (smooth or crunchy)

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon sriracha (optional, for spice)

2 green onions, sliced

1/4 cup chopped peanuts (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Cook the Noodles: Begin by boiling a pot of water. Add the whole wheat noodles and cook according to package instructions until al dente. Drain, rinse under cold water, and set aside.

    Prepare the Sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey (or maple syrup), and sriracha (if using) until smooth. Add a splash of warm water if the sauce is too thick. Set aside.
