Ingredients

2 cups ripe peaches, peeled and diced

2 cups fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust for sweetness)

2 tablespoons chia seeds

1 tablespoon lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt

Instructions

Prep the Fruit: In a large mixing bowl, combine the diced peaches and sliced strawberries. You can mash them slightly with a fork or potato masher if you prefer a smoother texture.

Cook the Fruit: Transfer the fruit mixture to a medium saucepan and add honey (or maple syrup), lemon juice, and a pinch of salt. Cook over medium heat, stirring occasionally, for about 10-15 minutes until the fruit starts to break down and release its juices.

Add Chia Seeds: Once the fruit mixture is bubbling, remove it from the heat. Stir in the chia seeds and vanilla extract (if using). The chia seeds will help thicken the jam as it cools.

Simmer and Cool: Let the jam sit for about 30 minutes at room temperature. You’ll notice it thickening up due to the chia seeds.

Transfer to Jars: Once the jam has cooled and thickened to your liking, transfer it to clean, sterilized mason jars or airtight containers.

Store: Seal the jars and refrigerate. The jam can be enjoyed for up to 2 weeks.

Serve: Spread on toast, swirl into yogurt, or use as a topping for your favorite desserts—enjoy the vibrant flavors of summer!
