2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup fresh peaches, diced (if not in season, use canned peaches in juice, drained)

1/2 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/2 cup Greek yogurt (or mayonnaise for a richer flavor)

1 tbsp Dijon mustard

1 tbsp honey

1 tbsp fresh lemon juice

4 cups mixed greens (arugula, spinach, or salad mix) for serving

Prepare the Chicken: If using rotisserie chicken, shred the meat into bite-sized pieces. Place it in a large mixing bowl.
