Peach Chicken Tacos

2 medium peaches, pitted and diced

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded red cabbage

1/2 cup crumbled queso fresco or feta cheese

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts and coat thoroughly. Cover and marinate in the refrigerator for at least 30 minutes (or up to overnight).

    Cook the Chicken: Preheat a grill or stovetop skillet over medium-high heat. Remove the chicken from the marinade and grill or cook in the skillet for about 6-7 minutes per side or until fully cooked (internal temperature should be 165°F). Once done, let the chicken rest for a few minutes before slicing into thin strips.

      Prepare the Peach Salsa: In a separate bowl, combine the diced peaches, about 1/4 cup of chopped cilantro, and a squeeze of lime juice. Mix well and season with a pinch of salt.

        Warm the Tortillas: Heat the tortillas in a dry skillet or directly over a flame for a few seconds on each side until warm and pliable.

          Assemble the Tacos: On each tortilla, layer slices of the grilled chicken, followed by a handful of shredded red cabbage, a generous scoop of peach salsa, and slices of avocado. Crumble queso fresco on top.

            Garnish and Serve: Top each taco with fresh cilantro and serve with lime wedges on the side.
