Peach Burrata Salad with Champagne Vinaigrette

4 ripe peaches, sliced

8 oz burrata cheese

4 cups arugula or mixed greens

1/2 cup prosciutto, torn into pieces

1/4 cup sliced almonds, toasted

1/4 cup fresh basil leaves

Salt and pepper, to taste

For the Champagne Vinaigrette:

1/4 cup champagne vinegar

1/2 cup extra-virgin olive oil

1 tsp honey or maple syrup

1 tsp Dijon mustard

Salt and pepper, to taste

Instructions
 

Prepare the Champagne Vinaigrette: In a small bowl, whisk together the champagne vinegar, honey (or maple syrup), and Dijon mustard. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Season with salt and pepper to taste. Set aside.

    Toast the Almonds: In a small skillet over medium heat, toast the sliced almonds for about 3-5 minutes, stirring frequently, until they are golden brown and fragrant. Remove from heat and let cool.
