Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

2 ripe peaches, pitted and sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

½ cup chicken broth

1 tablespoon balsamic vinegar

½ teaspoon red pepper flakes (optional)

1 cup fresh basil leaves, torn

1 tablespoon honey (optional for sweetness)

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat.

Sear the Chicken: Once the oil is hot, add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

Sauté Fruits and Aromatics: In the same skillet, add the sliced peaches and cherry tomatoes. Cook for about 3-4 minutes until the peaches start to soften. Add the minced garlic and grated ginger, stirring well to combine for another minute until fragrant.

Make the Sauce: Pour in the chicken broth and balsamic vinegar, then add the red pepper flakes if using. Stir to combine, scraping any flavorful bits from the bottom of the skillet. Let the mixture simmer for about 3 minutes to reduce slightly.

Combine Ingredients: Return the cooked chicken to the skillet, nestling it into the peach and tomato mixture. Cook for an additional 3-5 minutes, allowing the chicken to reheat and soak up the flavors.

Finish with Basil and Honey: Stir in the torn basil leaves and drizzle with honey if desired for a touch of sweetness. Cook for another minute, then remove from heat.

Serve: Plate the chicken along with the delightful peach and tomato mixture, garnishing with extra basil if you like. Pair with rice, quinoa, or a fresh salad for a complete meal.
