1 medium head of cauliflower, cut into bite-sized florets

1 cup grated Parmesan cheese

1 cup breadcrumbs (Panko recommended for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Olive oil spray (or 2 tablespoons olive oil)

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until the florets are evenly coated.

      Prepare Breading Station: In a shallow bowl, beat the eggs. In another bowl, combine the breadcrumbs and grated Parmesan cheese.
