Ingredients

8 oz fettuccine pasta

1 lb sirloin steak, cut into bite-sized pieces

4 tbsp unsalted butter

4 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

1 tbsp brown sugar

1 tsp smoked paprika

½ tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

2 cups baby spinach

½ cup beef broth

½ cup heavy cream

Grated Parmesan cheese for serving

Fresh parsley, chopped, for garnish

Instructions

Cook the Pasta:

In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain and set aside.

      Prepare the Steak:

Season the steak pieces with salt, pepper, and smoked paprika. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the steak to the skillet. Sear for 2-3 minutes until browned, stirring occasionally. Remove the steak from the skillet and set aside, leaving the juices in the skillet.

          Sauté the Vegetables:

In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, until fragrant.

              Add Tomatoes and Seasonings:

Stir in the cherry tomatoes, brown sugar, red pepper flakes (if using), and a pinch of salt and pepper. Cook for another 2-3 minutes until the tomatoes start to soften and release their juices.

                  Combine Steak and Broth:

Return the cooked steak to the skillet. Pour in the beef broth and mix well. Allow it to simmer for about 2-3 minutes, letting the flavors meld.

                      Creamy Sauce Creation:

Reduce the heat to low, and slowly stir in the heavy cream. Let it simmer for another 2 minutes until combined. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

                          Mix in Pasta and Spinach:

Add the cooked fettuccine and baby spinach to the skillet. Toss everything together until the pasta is coated in the creamy sauce and the spinach has wilted.

                              Serve:

Plate the pasta in bowls, sprinkling with grated Parmesan cheese and fresh parsley as desired. Enjoy your sweet and smoky garlic butter steak pasta!
