1 lb (450g) Italian sausage, casings removed

3 medium potatoes, diced (about 2 cups)

1 red bell pepper, chopped

1 yellow onion, diced

2 cloves garlic, minced

1 cup broccoli florets, chopped

1 teaspoon smoked paprika

½ teaspoon dried oregano

Salt and black pepper to taste

2 tablespoons olive oil

2 large eggs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients:

    - Start by washing and dicing the potatoes into small, even cubes, and chop the bell pepper, onion, and broccoli florets.

      Cook the Sausage:

        - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage, breaking it up with a wooden spoon. Fry until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set it aside, leaving the drippings in the pan.

          Sauté the Vegetables:

            - In the same skillet, add the remaining tablespoon of olive oil. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften and brown.

              Add Onion and Garlic:

                  Incorporate Peppers and Broccoli:
