One-Pot Zucchini Cookies Mac and Cheese

2 cups elbow macaroni

1 medium zucchini, grated

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

2 cups milk

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 teaspoon dried Italian herbs (optional)

½ cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pot: In a large pot, heat the olive oil and butter over medium heat until melted and bubbly.

    Sauté Zucchini: Add the grated zucchini to the pot and sauté for about 3-4 minutes, until it starts to soften. This will enhance its flavor and help to release some moisture.

      Add Pasta: Stir in the elbow macaroni, ensuring it's well combined with the zucchini. Sauté for another minute.

        Add Liquids & Seasoning: Pour in the milk and stir well. Add garlic powder, onion powder, smoked paprika, salt, black pepper, and dried Italian herbs. Mix everything together.

          Cook the Pasta: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for about 8-10 minutes, or until the macaroni is tender, stirring occasionally to prevent sticking.

            Cheesy Goodness: Once the macaroni is cooked, remove the pot from heat and add the shredded cheddar and mozzarella cheese. Stir well until the cheeses are melted and completely integrated into the pasta.

              Breadcrumb Topping: In a small bowl, combine breadcrumbs with a drizzle of olive oil (about 1 tablespoon). Mix until the breadcrumbs are coated. Sprinkle the breadcrumb mixture evenly over the top of the mac and cheese.
