12 oz (340g) spaghetti or linguine

1 can (15 oz) diced tomatoes (with juice)

4 cups vegetable broth

1 medium yellow onion, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

1 teaspoon sugar

2 tablespoons olive oil

1 cup fresh basil leaves, roughly chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic, and cook for another minute until fragrant.

    Combine Ingredients: Add the spaghetti (or linguine) to the pot along with the diced tomatoes (with juice), vegetable broth, dried oregano, red pepper flakes (if using), sugar, and a good pinch of salt and pepper. Stir well to combine all ingredients.

      Cook the Pasta: Bring the mixture to a boil, then reduce the heat to medium-low. Cover the pot and let it simmer, stirring occasionally, for about 10-12 minutes or until the pasta is al dente and most of the liquid has absorbed. If the pasta seems too dry, you can add a splash more vegetable broth or water.

        Incorporate Basil: Once the pasta is cooked, remove the pot from heat and stir in the fresh basil. Taste and adjust the seasoning with additional salt and pepper as needed.
