One-Pot Chicken Fajita Pasta

1 lb (450 g) chicken breast, sliced into thin strips

2 tablespoons olive oil

1 medium onion, thinly sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon chili powder

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

12 oz (340 g) penne pasta (or your choice of pasta)

4 cups chicken broth

1 cup diced tomatoes (canned or fresh)

1 cup corn (frozen or fresh)

1 cup shredded cheddar cheese

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Optional: sour cream and sliced jalapeños for serving

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced chicken and season with cumin, paprika, chili powder, salt, and black pepper. Cook for about 5 minutes, until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the onion, red bell pepper, and green bell pepper. Sauté for about 4-5 minutes until the vegetables start to soften. Stir in the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Add the cooked chicken back to the pot along with the penne pasta, chicken broth, diced tomatoes, and corn. Stir everything together to combine.

        Bring to a Boil: Turn the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 12-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

          Add Cheese and Lime: Once the pasta is cooked to your liking, remove the pot from heat. Stir in the shredded cheddar cheese and lime juice until the cheese is melted and creamy.

            Serve: Spoon the pasta into bowls and garnish with fresh cilantro. Serve with optional sour cream and sliced jalapeños on the side for extra flavor.
