One-Pot Balsamic Mac and Cheese

8 oz elbow macaroni

2 cups vegetable broth

1 cup milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tbsp balsamic vinegar

2 tbsp butter

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

1/4 tsp crushed red pepper (optional)

Fresh basil leaves for garnish

Instructions
 

Combine the Pasta and Broth: In a large pot, combine the elbow macaroni, vegetable broth, and milk. Stir to ensure the pasta is submerged.

    Bring to a Boil: Bring the mixture to a boil over medium-high heat. Reduce the heat to medium-low and simmer uncovered, stirring occasionally until the pasta is al dente, about 8-10 minutes.

      Add Seasoning: Once the pasta is cooked, stir in the garlic powder, onion powder, black pepper, salt, and crushed red pepper if using.

        Incorporate the Cheeses: Lower the heat and add the shredded cheddar, mozzarella, and Parmesan cheese. Stir continuously until all the cheeses are melted and the sauce is creamy.

          Add Balsamic Vinegar: Drizzle in the balsamic vinegar and butter, stirring well to combine. Let it simmer for another minute to allow the flavors to meld together.

            Serve: Remove from heat, and let the mac and cheese stand for a couple of minutes to thicken. Serve hot, garnished with fresh basil leaves.
