One-Pan Lemon Garlic Shrimp and Asparagus

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons unsalted butter

Zest and juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preparation: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with oil.

    Sauté Shrimp: In a large skillet over medium heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Season Shrimp: Add the shrimp to the skillet, along with lemon zest, lemon juice, red pepper flakes, salt, and pepper. Stir to coat the shrimp in the garlic mixture, cooking for about 2-3 minutes or until they turn pink and opaque. Remove from the skillet and set aside.

        Prepare Asparagus: In the same skillet, add another tablespoon of olive oil and the remaining tablespoon of butter. Add the asparagus, season with salt and pepper, and sauté for approximately 5 minutes, until slightly tender but still crisp.

          Combine and Roast: Return the shrimp to the skillet with the asparagus, mixing gently to combine. Transfer everything to the prepared baking sheet, spreading it out evenly.

            Bake: Place the baking sheet in the preheated oven and roast for about 10-12 minutes, or until the asparagus is tender and the shrimp are cooked through.

              Garnish and Serve: Remove from the oven and sprinkle with fresh parsley. Serve immediately with lemon wedges on the side for an extra citrusy kick.
