1.5 pounds baby potatoes, halved or quartered

1 red bell pepper, sliced

1 yellow onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Sausage: In a large mixing bowl, cut the Italian sausage into bite-sized pieces or leave them whole, depending on your preference.

      Combine the Vegetables: Add the halved baby potatoes, sliced red bell pepper, sliced onion, and minced garlic to the bowl with sausage.
