1 pound Italian sausage (mild or spicy, your choice)

2 tablespoons olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with herbs if desired)

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional for extra heat)

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Cooked pasta or crusty bread, for serving (optional)

Instructions
 

Sauté the Sausage: In a large skillet over medium heat, add the sausage. Cook for about 5-7 minutes, turning occasionally, until browned and cooked through. Remove the sausage from the skillet and set aside, leaving the rendered fat in the pan.

    Cook Onions and Peppers: In the same skillet, add the olive oil if needed and toss in the sliced onion and bell peppers. Sauté for about 5 minutes until they start to soften.
