12 oz penne pasta

1 can (14 oz) diced tomatoes (with juice)

2 cups vegetable broth

1 cup heavy cream or coconut milk (for a dairy-free option)

1 medium onion, finely chopped

3 cloves garlic, minced

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese (optional)

2 tbsp olive oil

Sauté Aromatics: In a large deep skillet or a sauté pan, heat olive oil over medium heat. Add the finely chopped onion and cook until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

    Add Pasta & Liquids: To the skillet, add the penne pasta, diced tomatoes (with juice), vegetable broth, dried oregano, salt, and black pepper. Stir to combine and bring to a boil.
