Ingredients

1 cup orzo pasta

2 cups vegetable broth

1 medium zucchini, diced

1 cup fresh corn kernels (or frozen)

1 small onion, finely chopped

3 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh basil, for garnish

Instructions

Sauté the Aromatics: In a large, deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Cook the Zucchini and Corn: Add the diced zucchini and corn to the skillet, stirring well to combine. Sauté for about 3-4 minutes until the zucchini starts to soften.

Prepare the Orzo: Sprinkle the orzo in the skillet, followed by the dried thyme, salt, and pepper. Pour in the vegetable broth and bring the mixture to a gentle boil.

Simmer: Once boiling, reduce the heat to low, cover, and simmer for about 10-12 minutes or until the orzo is cooked al dente and has absorbed most of the liquid, stirring occasionally to prevent sticking.

Add Cream and Cheese: Remove the skillet from the heat. Stir in the heavy cream and grated Parmesan, mixing until creamy and well combined. Adjust seasoning with more salt and pepper if needed.

Garnish and Serve: Fluff the orzo with a fork and serve warm. Garnish with fresh basil and additional Parmesan cheese, if desired.
