12 oz fettuccine or spaghetti

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp olive oil

4 cloves garlic, minced

1 medium onion, diced

2 cups baby spinach

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine (or spaghetti) according to the package directions until al dente. Reserve 1 cup of the pasta water, then drain and set aside.

    Sauté the Chicken: In the same pot over medium-high heat, add the olive oil. Once hot, add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through (about 6-8 minutes). Remove the chicken from the pot and set aside.

      Sauté Veggies: In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.

        Add Spinach and Tomatoes: Stir in the baby spinach and cherry tomatoes, cooking for an additional 2-3 minutes until the spinach wilts and the tomatoes soften.

          Prepare the Cream Sauce: Pour in the heavy cream and chicken broth, and sprinkle in the Italian seasoning. Stir to combine, bringing the mixture to a gentle simmer.

            Combine: Return the cooked chicken to the pot, along with the drained pasta. Toss everything together, adding reserved pasta water a little at a time until the desired creaminess is achieved. Finish with the grated Parmesan cheese, stirring until melted and creamy.

              Season and Serve: Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh basil leaves.
