2 cups vegetable broth

1 cup broccoli florets

1 cup bell peppers, diced (any color)

1 cup cherry tomatoes, halved

1 small zucchini, diced

1 cup corn kernels (fresh or frozen)

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Preheat Oven: Start by preheating your oven to 375°F (190°C).

    Sauté Vegetables: In a large oven-safe skillet or pan, heat the olive oil over medium heat. Add the diced bell peppers, zucchini, and broccoli florets. Sauté for about 5-7 minutes until they start to soften.

      Combine Ingredients: Add the uncooked brown rice to the skillet, followed by the vegetable broth. Stir in the corn, cherry tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper until well combined.
